Clarisse Restaurant is available for dinner by outside guests, where advance reservation is mandatory. Reservation can be made until 3 PM on the same day of booking.

Concept
Clarisse, the new fine dining restaurant of BOTANIQ Castle of Tura opened in the autumn of 2021. The restaurant takes the gastronomy of the castle to a whole new level by introducing an internationally unique concept.
Clarisse is named after the painter, Schossberger Klára ‘Clarisse’, the granddaughter of Sigmund Schossberger, who had the castle built. It invites its guests to a gastronomic tour recalling the atmosphere of a night at the theatre, where they can travel through the levels of the forest surrounding the castle while having an unforgettable experience moving all senses.
The menu inspired by the place and prepared from local ingredients is made truly memorable by, among others, the wine and cocktail pairing that are in harmony with the courses, the ceramic tableware designed for the menu by ceramic artist Júlia Néma, the unique background music inspired by the folk songs of Tura and composed for the different courses by István Pál ‘Szalonna’, the Hungarian Liszt Ferenc prize-winning folk music artist, and the uniforms designed for the personnel by Kati Zoób. The unique and intimate ambience of the restaurant is set by a gallery wall made up of up to 40 paintings and graphics, which all reflect the atmosphere of the castle and the park. In addition, one of the paintings is the work of Klára Schossberger.

Dreamt up by BOTANIQ Castle of Tura and the professional team also inspired by Clarisse, the menu accompanies the guests through the levels of the forest surrounding the castle, all this being similar to the experience of a theatre performance, where the courses represent the levels of soil, brook, shrub, forest and the sky. This is how, among others, greens, fishes, pigeon and wild boar get on the plates in the form of magnificent compositions, served on ceramic plates specially designed for the different courses. The prepared dishes follow the ‘farm to table’ concept, which means that the majority of the ingredients either come from local producers, or they are grown in the garden of the castle. At present, vegetables, honey and dairy products are brought from Zsámbok, a nearby village, and, guinea fowl and chicken come from a family farm located by the Kurca River. The courses go back to the traditions of the area and the era.

This is how, among others, trout, mushroom, quail, saddle of venison as well as pear get on the plates in the form of magnificent compositions, served on ceramic plates specially designed for the different courses. The prepared dishes follow the ‘farm to table’ concept, which means that the majority of the ingredients either come from local producers, or they are grown in the garden of the castle. At present, vegetables, honey and dairy products are brought from Zsámbok, a nearby village, and, guinea fowl and chicken come from a family farm located by the Kurca River. The courses go back to the traditions of the area and the era, for instance, the dessert is inspired by a recipe to be found in a Hungarian cookbook that was published in 1906.


About the team
Just like before, it is the same professional team, which has already become popular with the regulars, being in charge of the carefully selected menu of Botaniq.
As a result of the joint work and successful cooperation, the gastronomy section of Botaniq is to be led by Head Chef Tibor Jantner, as the chef in charge of the professional operation of the whole kitchen and the concept of the Palm House bistro while Chef György Szűcs as the leader of the fine dining concept and Clarisse restaurant, is continuously working on new and exciting additions to enrich the present concept. The special desserts are to be served on the tables thanks to the creations of Head pastry chef Róbert Mártha, whose previous creations have already been awarded by Michelin during his years spent at Onyx, and his new creations are the essential elements of the Clarisse menu.
The major aim of the team is to give new impetus to Clarisse restaurant by building on their extensive professional experience and using their knowledge and creativity.
